iText supports the same standard PDF security options as Acrobat does, as per PDF Spec. Any other symmetric encryption scheme would require a custom plugin to go along with Acrobat or other viewer.
The exception to this would be the use of PublicKey cryptography (aka encrypting to a certificate) that is supported by the PDF Spec and Acrobat, but not by iText or any other 3rd party tool at this time.
