I still don't understand the question. I've never heard of "itext matrix printers".
As far as I know, there is no such thing as an "itext matrix printer".

iText produces PDF. It's not a printer driver.
It doesn't produce printer syntax (e.g. PCL).
It's "printer independent".

If you can create a PDF that can be printed by a matrix printer (e.g. with Adobe Acrobat),
you can probably create a similar PDF using iText.

So the question is: can you produce such a PDF?
If so, we'll take a look at that PDF to see what is different about it
(compared to the iText generated PDF).
If not, you need to look for a printer driver that is capable of translating
PDF into a printer language that is understood by the matrix printer.
