This is an introductory chapter about iText's PDF manipulation classes.
In this chapter, go to p181-183 and read "Inspecting the form and its
fields".
This already gives you a first impression about how it's done.
Of course, this only tells you how to get the field type and the
possible values of a check box or radio field.
If you need to know more about other properties (e.g. is the field
read-only? is the field required? which font is used?), you'll need
chapter 8.
