That's what I am trying to say in some replies to the post "Save PDF as plain
text".
iText lacks a page command model which enable you to linearize and modify the
page commands.
Let's suppose that you have some contents in a page like:
This is the surface of the page
--------
Some images
--------
Here your watermark goes
--------
Some texts
--------
This is the bottom of the page
You must find out the insertion point--between which commands you insert the
content.
PDF page commands draw the bottommost contents first, and subsequent commands
draw contents above the existing contents.
So, as for the above example, you find out the end of the text contents, insert
your watermark, and then write back the original image contents.
However, you have to deal with a lot of PDF details.
