Ok, thanks for these answers.

I had misunderstood the page 25 of the document. I thought PAdES part 5 was
for signatures of partial forms only, that there were already some features
for signing complete forms (As extracting certificates from XFA signatures
of static PDF already works even with old versions of iText).

I'm glad to hear that it is planned for the next year.
