Chris is right that it's a matter of learning.
Let me encourage you, that the learning curve is relatively short, and
JAWS works very well with Word 2007.
I really like it.
Take some time to just explore each ribbon menu and make notes on the
items you think you will need.
There are quick key  combinations for almost everything, and after you
learn them, you will be very comfortable with Word 2007.
