Maybe a naive question ? Are you sure you put your driver jars into the lib directory...
Seems like jboss is unable to find some class... As the message 'Could not load class' comes from a wrapping of a "catch (ClassNotFoundException)" into JDBCEntityCommandMetadata. At least your xml config looks just fine...
