In the Kernel menu, you can change the kernel to whichever kernel you would like to use. Then save the notebook, and the next time you open it, it will automatically open with the new kernel.
(Note that this assumes you are using IPython / Jupyter at least version 3. If you are not, you should upgrade to Jupyter 4.)
