Hallo seems to be I found the reason:

When composing new mail, K9 finds the "reply-to" in the Identity and add as 
a reply-to field to the email.
Sending then, all works fine - the email-receiver gets the reply to and can 
use it when answering to the email.

But not, if I save the draft, take it again and write more and then send: 
now the email cotains NO reply in the header.
It was lost in eigther saving the draft or retrieving it.

I'm a complly newbie in Android programming but at least my teacher gave me 
a version of the source code,
where I found: the reply to is composed once when creating/composing the 
mail. The header ist then unchanged until
the sending besides the fact that the reply to information seems to be lost 
or not asked again,

I now know the workaround: to NOT saving the draft or to create a new email 
and copy+paste the text and send -
but anybody knows how to fix the above bug?
