Thanks for clarifying Dolphin isn't crashing.
Did you check the zip files to verify if they were completely created or not?
>From the video, it's not clear.
Also, the panel isn't shown in the video so it's unclear how many Dolphin
windows are open in total.

In the video:
Start Dolphin in the user's home folder, icons mode
Right click Music - Compress - compress to Music.zip
Double click another folder "Pictures" - right click a subfolder Wallpapers -
Compress - compress to Wallpapers.zip
Both notifications show "Compressing x files (Finished)"
Dolphin opens another window

I tested on Plasma and Dolphin built from git-master. Observations:
I started with just one tab in ~/
After canceling the second compress operation, a new tab was opened in ~/
If I start one compress operation and change directories, a new tab opens to
the directory the new .zip file is in

Opening a new window after a compress operation finishes seems to be intended
behavior. 
It would be a bug if the compression operations don't complete and the zip
files didn't have all the expected files.

Both compress operations proceeded in parallel and completed normally
