Here's what I do...

Grab the last 3 feet or so of cable and slide your hand along it to stretch the outer jacket 1/2" or so beyond the end of the conductors. Cut the jacket flush with the conductors, and when you let go it will slide back to expose the conductors. Then grab the conductors and push the jacket back the other way to expose more of the conductors. Cut the conductors back a bit so if you let go the jacket would slide back over them, but don't let it. When you're ready crimp it, the jacket will have a tendency to easily slide into the back end of the connector and be crimped rather than to pull back from it.

With a little practice this works nearly as fast as using a knife-type stripper, and you never have to worry about nicking the conductors.
