I just upgraded to latest Ubuntu and it wants my IBM Thinkpad to use hostap

It seems to work for about 20min then die.

If there is no easy solution then how easy is it to force Linux/Ubuntu to use
good ol' trusty orinco wifi at every bootup?

Move the hostap module somewhere that Ubuntu can't get it. Then load the old orinoco module manually or through an entry in rc.local. You may have to create an rc file to load the module sooner in the startup order so that networking can start the wireless.

You could also just rename the old orinoco module to the hostap module name and see what happens.
