It will be interesting to see if this can be accomplished. Before iTunes had the feature, I used a program on two Macs called netTunes which allowed a VNC-like control of the iTunes interface on a machine with their server app. installed. Note that Apple has a wired/WiFi device called AirPort Express which can take iTunes streaming music and output it to a set of amplified speakers or a stereo. http://www.apple.com/airportexpress/ This link describes hosting the music on Ubuntu and playing on the Mac: http://www.oreillynet.com/xml/blog/2004/12/streaming_itunes_from_ubuntu.html However, you may find that the same software project may offer a way to have a DAAP player on Linux.
