You are talking stock KR2, not KR2S.  The KR2's bubble canopy would do 
exactly that, and that's why some KR2s with that canopy don't fly 
passengers.  For the KR2S with a 2S, Dragonfly, Lancair, Pulsar, or Glasair 
canopy, the head room thing is a non-issue (although the shoulder room is 
another issue entirely).  I have dual sticks, and couldn't imagine any way 
to improve on it.  I flew a side stick plane a few weeks ago, and my hand 
got tires (and I couldn't change) in short order.  With dual sticks, I can 
use whichever hand needs to be used, swap out when tired (although that's 
never happened, because it's natural), and the passenger stick is always 
removed unless there's a passenger over there (which is just about never). 
I guess if you're huge the center stick might be the way to go, but 
otherwise, I would urge folks not to make that mistake...
