Copying a brown pattern with an empty cartridge is OK if your printer will allow you to do so. Mine won't. I have four cartridges, one black and three colour - cyan, magenta and yellow. If just one of them is empty, it won't print at all. If the black is low I then have the option of printing in black by a combination of the three colours to save what black ink is left.
What I have done in the past is to scan the pricking in greyscale, increase the contrast so the black dots are really black and then use a photo editing program to replace the grey background using the colour replacement tool with white or use the paint bucket to fill the grey area with white. It depends on how the grey is made up as to whether the colour replacement tool will work or not.
