Matt,

iTunes has a habit of resetting its directory in my experience, so Tim may well 
be correct.  I store my mp3s on an external drive and iTunes always resets to 
that My Documents/iTunes folder if for any reason it can't find the external 
folder.  You may want to take a look to see if your iTunes library file (.itl 
extension on Windows) is still where it should be n'all.

There's a shareware program out there called iGadget that allows you to copy 
files back from your iPod onto your hard drive (try looking for it on 
download.com).
I think you can also make sure that iTunes doesn't delete what's currently on 
the pod by turning the pod synch off before you connect it.

them i'm still going to lose all the ratings and playlists - along with all the

    Was just praying someone would say that ITunes automatically back itself up 
and if you find file Itunes*&*.x*kf then i can recover everything.
     
    It does look like ITunes has been reinstalled from scratch but again surely 
the time that takes i'd have noticed
