You could double thick the 3/4" MDF just in the area between the rails. That
would allow enough material to insertt the clamps into a 
sufficiently deep hole while still having the MDF's top surface at the usual
level. The extra MDF glued on the bottom might even make the structure more
rigid.

You would loose some table capacity because the cam clamps take over an inch
of material to mount in.  They are pretty low profile.
