Gwen, If it is your intention to publish the book it is worth remembering that most census images and indexes are copyright. To avoid later problems the owner's consent must be obtained unless a free license has been granted.
This is not true in all countries as some have a "public property" exemption, but I see that you are from New Zealand so I would advise that in particular this is true for English censuses, where the copyright is held by the Government.
