Brian, The path for you documents is found in Options>Customise>Launch, this is what Legacy uses as the default location/path for your document files, so in your case should contain C:\Legacy\Docs\Lehman Family Docs\. However, you now mention that your files are contained in sub-folders, and, therefore I assume that this path will not contain any images, how Legacy will handle this I don't know. It may be that you will need to use a sub-folder eg. C:\Legacy\Docs\Lehman Family Docs\Birth\, but I do not have the same set-up as yourself, so I cannot test.
