In simple terms a tag is like a little flag that you can attach to someone so they can be found again. The meaning of the tag is up to you but one use is to tag a group of people that you need to work on. For example with the release of the 1940 US Census you may want to mark everyone in your file who was alive and living in the US at the time of the 1940 census. You can do this by turning on one of the tags for each person. As you find them, or do not find them, in the 1940 census you would remove the tag. This helps you keep track of who still needs to be found in the census.
Some people also tag their direct ancestors so those people can be quickly found and separated from people on collateral lines in the file.
