I would like to be able to switch off the quick launch toolbar and replace it with the "My Toolbar" and not show ANY other toolbars.
If we are going the modern route then toolbars should be able to be set on or off and positioned where you want them.

Alan,
There is a limit to the number of items on the Quick Access Toolbar - the little one top left - of 10 items.
The equivalent to the 7.5 toolbar is the My Toolbar Ribbon.
I've just put 36 icons on it - how many do you want?
