Once you've fixed the widths as Cathy suggests, they should stay as you set them.

If you can't get the mouse to pull the column wider you may be best to work out what column it is and in Index View - Options > Customise Columns delete that particular column. Then you could re add it if desired.
I tried narrowing a column until it disappeared and found I could pull it wider again by moving mouse to the right.
Resetting to defaults may be another way to handle this.
