I just tried a test, and if you select "Exclude from reports" on the source(s) that you want to suppress, they will not show in the GEDCOM. This is going on the assumption that the source(s) in question are only used on your living individuals. It doesn't take into account if you have a source that is attached to both living and non-living people...
