MEXICALI STEAK
 
1 1/2 pounds London broil
1/2 tsp. chipotle powder
1/2 tsp. coriander
3 cloves garlic, minced
1/4 cup lime juice
1 red bell pepper, diced
1 red onion, sliced
10 oz pkg. frozen yellow corn nibbles
1 tsp. cumin seeds
1 tbs. cilantro
GARNISH: Corn Salsa
 
Heat broiler.* Pierce beef with fork. In bowl, combine next 3 ingredients. Rub steak with 3 tbs. lime juice, rub with garlic mixture. Broil steak 15 min. or until done, place on serving PLATTER.  In bowl, combine remaining ingredients. Serve GARNISH over steak. Makes 6 servings.*
