I'd suggest PrivateGSM. The people who created it are on this list, it's based on open standards, it isn't insanely expensive (it's free, even), and in theory, it has modes of obfuscate to evade traffic analysis of sorts. It also has support for Android, iPhone, and a ton of other platforms.
