LibreOffice Tools -> Options -> Appearance panel used to install the "Light Teal" link from the Extensions web site. The 'Enable application theming' check box selected. Restart LibreOffice Calc launch shows no issue in fg/bg colors for the font selection listbox nor for any other UI element. Changing os/DE to a Dark color scheme is well tolerated, but better to change and use a dark appearance theme. Since OP suggests this was following an update from 25.8 to 26.2; perhaps simply needs LO profile factory reset?
