No you can not launch on Windows via a soffice.bin call, it must be launched
via the soffice.exe--or one of the module specific wrappers swriter.exe,
scalc.exe, simpress.exe, smath.exe

Correct the pinned shortcut and you should have not further issues.

You could edit the existing shortcut via its right mouse context menu and
select properties -- change the target to the correct .exe.

Or you can pin to taskbar directly from C:\ProgramData\Microsoft\Windows\Start
Menu\Programs\LibreOffice 5.2 opened in Windows Explorer-- yes it is still
there in Windows 10.

And you can also still pin to taskbar from the Start center--just more
convenient if you have an alternate shell, i.e. ClassicShell.net's ClassicStart
Menu.

Reopen if with a corrected short-cut pinned to the Windows 10 taskbar you are
still having issues.
