If you wanted to set up a beaming rule that only affected other durations, you'd need to use #(override-beam...) Hmm... say, 3/4 time? beatLength would be 4. You could manually set that to 8 for some reason, and set beamGrouping to (6), but still want to end 16th note beams at every quarter. You'd then need override-beam.
