I know what you mean. I think LilyPond produces beautiful scores and it only gets better and better with each release. I look to get the most out of the program and "squeeze" whatever I can; that includes more advanced engraving options (i.e. "contemporary" notation/techniques, graphical and aleatoric elements, etc).
Pushing the boundaries is often times a great way to discover new approaches & possibilities!
