I am not in a position of having to maintain any real production servers. So I often just clone a new one when I need one. For the /home/ issue, I agree, if you have a set of users. In the latest two cookbooks we describe a traveling /home/ that uses NFS and automount. But again, I don't have it in production, so it's just a starting point.
