Oh well, it seems it was a problem with debians libfluidsynth package.
Running 

./configure --disable-fluidsynth --enable-lash

seems to change something about it as configure now fails with 

checking for SNDFILE... configure: error: need libsndfile >= 1.0.0

but

~/source/build_stuff/muse-0.8.1$ dpkg -l libsndfile1-dev
Desired=Unknown/Install/Remove/Purge/Hold
| Status=Not/Installed/Config-files/Unpacked/Failed-config/Half-installed

Anyways, Thorsten Willms mentioned the 

export PKG_CONFIG=/usr/bin/pkg-config 

thing and now it _seems_ to build. We'll see..
