I have a similar work to do here: a Pentium Tillamook based PC with flashdisk, TFT, touchscreen and wireless LAN in a case to be installed in vehicles. Now we are running NTEmbedded with does the job very nice. But for only html-pdf-viewing we want to use Linux instead, first because it is cheaper and second because I'm the Linux guru here and I want to set a 'Linux-statement' (but I'm definitely no Linux-supercrack). I made a nice composition with LEM that worked well. But it lacked in some ways like old kernels (USB!), old X11 (no font antialiasing, very few fonts, no embedded-suited fs (I want JFFS2 or at least a fully ram-based rootfs to avoid data corruption when just cutting power). But it seems that LEM is dead. No new developement, no mails in the mailing lists any more. What a pitty since LEM seemed to be what I searched for! Then I hang around with midori from transmeta. Ideal to click your own system. But I had compiling errors because I didn't had exactly the necessary surrounding to make the system (RH 6.2 or RH7 with midori beta3). Unfortunatly Transmeta says good bye to midori: they don't want to maintain the developement any more. They gave the sources to sourceforge but the activity in the mailing lists decreases rapidly. So I think about doing it from the scratch but I fear I've got no time for that. At last, I'm also waiting for a good and free embedded distri that helps me to use all those nice features linux offers...
