[LIH] How to change file associations

hi,
        how can we change file associations in Linux. In my system when I open any mp3 
file from
file manager, the XMMS player doesn't open, instead some other command mpg?? plays the 
file. As a
result I cannot stop the currently playing file and start playing another mp3 file.
