Hi, As most of the people advised on this list DNS has resource caled MX record. You can put multiple values for RR of MX. Mail is delivered to the RR of least value. If it fails to reach then the client will try for smtp server with next highest value. My understanding is mail delivered to the secondary mail server will not be used for clients by pointing to pop3 or imap address to the secondary. Secondary in turn will try deliver to the primary.
