I would recommend RAID 5 mailboxes in Maildir shared over NFS to two or
more frontend servers with load balancing DNS records.
rsync the Maildirs to an alternate server setup as a hot standby, or use
an automagic bcc feature on the MTA side (aliases/virtual features) to
deliver copies of all email to another standby server.

I personally would not use qmail, I prefer postfix. Binand will
recommend courier-mta, while SRS would recommend Exim, or Sendmail.

Much easier to extend to what you need to worry about.
If the email will be in a standard format, you will find it easier to
use aliases and script the output directly to a printer.
