Assuming you are talking about http proxy, you must install and
configure squid to act as your proxy server on your router box.

You must first configure your router to do Source Network Address
Translation (SNAT). Then, you must specify policies and rules so that
only connections from client 2 will go out. The exact commands to do
this are beyond the scope of a mere email. I suggest you go with a
software like Shorewall to make it easier to do all these things.
Shorewall comes with excellent documentation.

You need Destination NAT (DNAT) to do this.

Why not just use your webserver's apache logs?

Ummm. We are not in the business of keeping dangerously unqualified
people employed. I do not know you from Adam. Give me one reason why I
should waste my time to write elaborate instructions so that you can
keep your job that you probably got through lying about your knowledge
of Linux. However, I am not heartless. I have given you pointers that
you should be able to follow to achieve what you want to achieve. If
you are incapable of following those instructions, perhaps you should
consider a career that does not involve Linux and network
administration.
