Try mgetty+voice It will do a simple ansering machine, as well as
providing an interface for doing things like voice mail. It will
also handle fax if your modem does class II fax. It will also
process the caller id info if your modem/phone line supports it.
It has tools for converting between your modem voice format and
other voice formats. (I convert incomming messages to .wav files
and e-mail them to my account...)
There is also a package called mvm that is a simple voice mail
system... I haven't tried it out yet...
