I'm sure you will get many recommendations. Probably designing an
appropriate script for tar is the appropriate way to go.
If you insist on a GUI, there are some decent commercial products. My
experience is limited to Bru, which seems just fine. There can be some
technical problems associated with backups and hardware, and so it can
be useful to have technical support from a commerical outfit such as
Bru, which has been excellent in this respect.
