I use adaptec easy cd pro for winXX
and a fairly new package called cd-record (not sure about that one) after   
the wellknown couple of mkisofs and cdwrite.
i have not tested cd-record enough to tell much about it but it should   
support CDRW and is very promising.
I use these tools in their console version (no Xcdroast or things like   
that).
