I should mention that registerdirect.co.nz provide imap service for a reasonable price, with domain registration. The online configuration of that is pretty good. The only beef I have with them is that the mail header handling is lousy. They strip the envelope recipient, which I don't find acceptable. Mailbox size may be a bit small, but perhaps some extra fee changes that. No outages for me during any of the earthquakes (well at least while I had power), and it's a Christchurch-based company.
