Also for high resolutions I found that many cameras have higher resolutions
in YUV than in MJPEG - 2Mpix you get 1600x1200 in YUV and less in MJPEG for
those that support the MJPEG format.

The uvcvideo driver doesn't depend on a specific USB version. As far as I 
know, pretty much all consumer UVC webcams support both full speed (USB 1.1)

and high speed (USB 2.0). Obviously, you won't be able to stream
uncompressed 
video data at high resolutions using full speed, so you should pick a webcam

with MJPEG support.
