She's accustomed to MS systems.  I figured OpenOffice would suffice for
productivity.  There are so many web based apps now that she can use Firefox
to access her e-mail via webmail and/or do things at various other sites.

Well, I installed it this evening and the OS seems to do fine but the apps
are taking a while to load.  I have 192M of ram in it, so it's not TOO bad
on memory.  I am a bit concerned about the time it's taking the apps to load
though.  I might have to consider a different flavor.

This is true.  I'm going to suggest she picks up "Linux for Dummies" and
"Linux for Non-Geeks" to help her get a better feel for the OS.  If her
primary use is e-mail, web, and productivity though, she shouldn't be too
bad off...I hope.  :)
