I agree. That's why I suggested having "one or two" volunteers do this.
It'll be easier to keep track that way.

Well, almost certainly the vendors won't have enough excess stock on
hand at the show for all the LUGs to give out to each user they give a
demo to. I'm thinking more along the lines of getting enough so each LUG
could have a display or demo copy of each item, which could also be used
as door prizes or thank-you gifts to the LUG volunteers.

I've been to a fair number of trade shows myself, and there's often
a little bit of frenzy at the end as the vendors try to give away
their remaining stock so they won't have to ship it back to the office.
They go to shows in part to give their products exposure, and offering
to help by spreading 50 - 100 copies throughout the world should be in
line with what they're trying to accomplish.

I see this as an "in addition to" request, rather than "instead of".
The way I see it, the simpler the task you ask someone to do, the more
likely that they'll do it. If a vendor brought enough stock for 6,000 to
10,000 attendees in the first place, it's very simple to ask for 100
copies or so, and have them turn it over to you. Compare this to asking
them to go home, then ship out to 50 or 100 different addresses. Only
the most dedicated companies would be willing to do the latter.
