Safe, reasonable but only if you backup the data elsewhere as well. LVM is nice in that if you ever wanted to expand the RAID you can just grow the LVM. For reliability I would just mirror the two drives, less space but there is your redundancy. Take one off-site as needed. i would do the LVM with a software RIAD 5.
