I've been a windowmaker since ... well that would just show my age ...

You can configure it using:

(1) wmakerconf
(2) WPrefs (look in usr/lib/GNUstep/System/Applications)
(3) Editing the files directly ... ~/GNUstep/Defaults/
    Look at
     WMRootMenu for menu items
     WMState for initial startup
     WindowMaker for preferences

I've setup GNOME and KDE for my clients - but after many years on
WindowMaker I can't see a need to use anything else ...
