Ok all. After looking for a book that is structured from start to finish to 
give a good foundation I believe I have found 2 that work for me. Your 
mileage may vary.

The first is "The Definitive Guide to CentOS" by Peter Membrey, Tim 
Verhoeven and Ralph Angenendt.

Apress ISBN-13 978-1-4302-1930-9

Part 1 starts off with Installation, Getting Started and then Using YUM.

Part 2 is going into Production with setting up Apache Mail, DNS, DHCP 
SAMBA and VPNs.

At this point I'm on Chapter 5 with setting up Apache Server.

The instructions have been good and even though I have been using CentOS 
6.2 while the book is for 5.5 it has been what I needed to figure things 
out.

The next book is another Aperss book. "Foundations of CentOS Linux by Ryan 
Baclit, Chivas Sicam, Peter Membrey and John Newbigin. ISBN 
978-1-4302-1964-4

This book seems to be almost classroom material.

My original goal was to learn Linux from the ground up with the outcome 
being certification and having the skills to demonstrate to a potential 
employer.

I'll let you know how this all works out.

Thanks for your help and suggestions and hopefully this helps someone else 
who wants to follow this road.
