Thanks.  I'll give it a shot.

What about the <CFFILE> function.  Has anyone used it to upload files to the
server?  Is it better than a simple input statement in an HTML form?

No, it has to be a real drive path.  You can use
ExpandPath("../videos/") to do that sort of thing however.
