do you have any virus checking software?
 
try using the to and from as:
 
to="Name <email>"
from="Name <email>"
 
Also, do you have your email settings set up in the cf admin?  you will not need to specify a server if you do.

You need to specify mail 'server'  name within <cfmail ....> i.e. server = "mail.truth.com".
