Use nfs-swap and you can away with as little as 8Mb. The performance
will be effected if the clients have only 10Mbit NICs, but it will
work. (Actually that is what I got at home)

I think that the two most important factors are: 

a) 10Mbit or 100Mbit Nics on the clients
b) The speed of the graphic card on the client

On 10Mbit clients, the amount of RAM on the client is probably more
important than b).
