Andreas,
  This is really an NFS question, not an LTSP question.

1) If you are not familiar with NFS, Google for the NFS how-to and read
the exports man page.

2) I'd add another export to the /etc/exports file for this user,
restricting access to just the one IP and user. There is an an example
/home export (for local apps) in the standard LTSP exports file.
